In your games, how much of the Greyhawk stuff do you use?

As a DM, I don't think I use anything from GREYHAWK. I do allow players to use stuff therein for their PCs, though.

Apologies for thread derailment, but what campaign are you currently running? I am curious because the results of the last two of your campaigns were quite exceptional...

I think I only take a few of the low level spells from Greyhawk; mirror image and web come to mind. Oh, and the underworld "specials" at the end of the book are really cool; gotta use that stuff for inspiration. That's about it.

I use the Weapon vs. AC table (but I keep d6 damage for all weapons) and I don't think much else, except maybe a monster here or there or a spell for an NPC.

Some of the spells, some of the monsters, and the (idea) of the thief (I use a redesigned version, normally.) I go back and forth on whether I like Magic Missile, and some of the other spells feel wrong or in need of a rewrite.
I'd be willing to use something like the paladin, but I haven't completely decided what changes I want to make.

I use more than I like from Greyhawk. Mostly cause my players like the funny shaped dice and more class options. So I use the multi classes in there, the variable weapons and hit dice. Some of the spells I toss in for good measure.

As much as I can. The funny dice, the brilliant monsters and treasures, tricks and traps. This is a more inspirational booklet than anything before or since.
