Here's one, but it might be more than your party bargained for...
Other than this, I think there are rulings for hit dice for undead giants in the AD&D Dungeon Masters Guide.

Take a skeleton. Give him more HD.

OD&D Skeletons have 1/2 HD, and Normal Men (e.g. Bandits) have 1 HD, so you could you this as a rule of thumb and give any skeleton form 1/2 of the HD of the living creature. And perhaps have it turned as an undead of the same HD.
Examples: Gnoll Skeleton, 1 HD, turned as Zombie Ogre Skeleton, 2 HD, turned as Ghoul Hill Giant Skeleton, 4 HD, turned as Wraith
Human zombies have 1 HD just like normal humans, so for zombies you could just use the same HD as the living creature.

This may be what you’re looking for, from MC10 (AD&D 2e). Probably way more info than needed for OD&D, but I had to post it for the Monty Python reference, at least.
