I have been eyeballing this PF Beginner Box for a while. I keep hearing the positive experiences people have had with it so I am picking it up soon myself.

Definitely worth picking up. Great, great product, and I still have no issue running it as system of choice. Just that I am catering to my Son more often than myself.
That said, the hybrid system we play is not much less involved than the BB minus the grid and counters.

Well, its essentially 3.x stripped to the bone. Only a handful.of skills. Feats and other rules that rely on gridded combat are eliminated. I use a simple dc 15,20,25 type thing. I use a auto crit on 20, instead of threats, but weapons only do max damage, until higher levels when it becomes x2. I do add in things from PF like channeling for clerics instead of turning, and the simpler dodge feat (flat bonus to AC). I also use simple ability checks as needed, like for breaking down a door, instead of worrying about hardness/hit points, et
My stat blocks are simple. AC, HP, attacks/dmg (including something special like a minotaur charge, or kuo toas sticky shields) and F, R, W saves. If they have a feat related to.combat that gets use without a grid and minis (like say, cleave) i will put that down. For enemy classed characters, I use the simple generic statblocks in the 3.0 DMG and add key spells that would actually get used. I dont mess with any details that are unneeded at the table.
Overall I would say the complexity level is roughly C&C like. It plays as fast as our S&W complete game did. But combat is more dramatic as PCs hit and get hit more often.
