Interesting read. I just want to add my thoughts to the mix.
Vader:
I always saw him as an an Imperial Warlord rather than a bounty hunter. He would have had some rank in the Empire but not as high as he became later. I kind of also saw him as part of an 'unholy trinity' with Tarken and the current Emperor or another figure. Vader would have killed Luke's father not be him and single handedly wiped out the Jedi. Thus a final showdown between Vader and a fully Jedi Luke would have been set up.
Luke:
Star Wars was, is and should be about Luke. His journey from farm-boy to Jedi would have been the central theme and would have taken longer than the three movies.
Jabba:
Not a slug. Maybe not human but I never found him a threat in his form. He would have become a main antagonist in the overall story and maybe worked with Vader some.
Leia
Not Luke's sister. Luke may have had a twin sister, but it wasn't her leaving the love triangle between Her, Luke and Han intact.
Boba Fett:
One of those guys between sides, a true mercenary. He works for whoever pays more and hates Vader and all Jedi. A confrontation between Fett and Vader would have been cool.

I had never considered Vader as a bounty hunter, but then the first time I saw Star Wars it was a marathon viewing of the trilogy. I think this site is giving me a lot more respect for the movie then I previously had.

I think this site is giving me a lot more respect for the movie then I previously had. You kids today have it easy. Us old-timers saw Star Wars -- and then had to wait for three years for the sequel! Fortunately, the original was re-released each summer in between, so we could get our fix. But for those three years, that one film was all we had. (I mean aside from the few books, etc.)

I remember when we were sure Boba Fett was Luke's father, the city in the clouds helped us with that. He could have killed him but did not a couple looks and such

A couple other ideas I have had. (I'm watching the original trilogy today.)
Episode I would have been what we know as Star Wars the rest unfolding as episodes II, III and so on. The clone wars would have been a series of conflicts that set up the Old Republic for invasion by the Empire. This way Vader's betrayal would have had more impact, not only did he betray the Jedi but the Republic as well.
Tarkin would have lived, showing up later on in the series as, possibly, the new Emperor after assassinating the former Emperor. At this time though, with the Empire in chaos from the growing rebellion and the loss of important figures on the Death Star, He proves to be a ruthless but short lived leader.

Us old-timers saw Star Wars -- and then had to wait for three years for the sequel! Which is exactly why I have such mixed feelings about the whole Epic thing. I had three years of playing a home-brew OD&D Star Wars (which we cleverly called "Space Wars") with certain fundamental assumptions in place, and then Lucas upset the whole apple cart with Empire Strikes Back. ESB just didn't fit the direction we expected it to go, and this was quite traumatic at the time.

At this point, the only thing I would really change up to ESB would be Vader as Luke's dad. I always felt Return of the Jedi was the weakest of the series and needed massive changes. My above ideas would have left things pretty much the same until Jedi.

I had three years of playing a home-brew OD&D Star Wars (which we cleverly called "Space Wars"). Ha! I illustrated and wrote a Star Wars knock-off story in late 1977. Title? SPACE WARS ;D
