Does anyone know why the cover art was changed from early Men & Magic printings to the later ones? I was curious why they changed the cover for that booklet and not the others.

Probably because it was not original art. From The Acaeum: Incidentally, the image was "inspired by" artwork by Dan Adkins, originally found in Doc Strange comic #167, Apr 1968, on page 11. I think copying was pretty much SOP for Greg Bell. As I recall, the "Fight On!" image came from a Steranko panel depicting Nick Fury.
In what I took to be an "in joke", a copy of the fighting man from the Greyhawk cover appeared in The Fantasy Trip: Advanced Melee on page 11.
