The quote below is from my house rules, I was attempting to find a way to succinctly communicate the essence of alignment to younger players new to the concept. Please take a look and let me know if I succeeded. I welcome both Broadsides and Bravos.
Lawful beings strive to promote and support civilization and order. The greater good is considered more important than individual freedoms, though the most successful Lawful civilizations provide both to their citizens.
Neutrally aligned beings view both Law and Chaos as important to prevent the other from becoming too dominant. In general all but the strictest of Neutrals regard Law as the “lesser of the 2 evils” and, if need dictates, will usually side with Law against Chaos in major conflicts.
Chaos is Darwin in action; survival of the fittest with the strong ruling the weak. This lesson is taught by nature and Chaotics take it to heart. Though most Lawful beings regard Chaos as synonymous with Evil, the Chaotics themselves see their beliefs as a more pure form of existence than Law.

It's all really up to your own interpretation, of course!
A very different take would be to characterize Law as "Apollonian" and Chaos as "Dionysian."
Your "survival of the fittest with the strong ruling the weak" could describe a rigidly ordered, indeed literally Spartan, society.
Chaos could by contrast be (at least on its face) all about Liberty in the anarchic sense; "Do what thou wilt shall be the whole of thy Law."
Either taken to extreme could be inhumane. In Moorcock's works, Law is generally a sort of underdog lesser evil -- but true freedom lies in the Tao-like Balance. That's an elevated concept of Neutrality. A more mundane one would be simply keeping to normal duties and aspirations rather than advancing ideologies.
