I typically do not like mixed groups of NPCs (such as those generated by the system on pp. 175-176 of Appendix C in the DMG). Birds of a feather flock together. NPC groups of all the same race, class, and level were the norm in OD&D, as witness the 1974 rulebooks, the supplements, and the Monster & Treasure Assortments.
Consider the racial preferences table on p. 18 of the PHB: hatred, antipathy, or at least suspicion are quite common.
Clerics regard other classes as heathens, or at least next door to it.
Fighters regard other classes as wimpy pencil-necks.
Magic-users regard other classes as chowder-headed idiots.
Thieves regard other classes as marks.
And the sub-classes are even more particular in their sensibilities:
Druids and clerics regard each other as heretics.
Rangers don't like to hang around even with more than a couple of other rangers, much less non-rangers.
Paladins? Very choosy about the company they keep!
Illusionists regard magic-users as lacking in refinement, style, and intellect; while magic-users think of illusionists as little more than stage magicians.
Assassins? Nobody wants to hang around with these guys!
Monks? Very reclusive, very particular, very weird.
Bards? So rare in my campaign world that you can count them on your fingers.
Higher level members of a class will not want to waste their time and energies hanging around with those beneath them, and those of a lower level will typically avoid those of higher level so as to not be exploited by them.
I also like for the sub-classes to be suitably rare, and even more so monks and bards. I crunched the numbers for how rare each class is assuming that each NPC is rolled 3d6 in order, set in stone.
Without further ado, here are the tables I use for random NPC encounters. All you need is a 10,000-sided die.
Number appearing is 4-6 (except for rangers, who are encountered in groups of 3).
Outside the dungeons:
0001-2279 clerics
2280-2566 druids
