I added a few more quotes to my post where Gygax attributes the Black Pudding to Arneson and claims the Ochre Jelly as his own.

Brain damage o.0 The red of The Blob is very similar to the red ochre pigment used in Africa as body paint, which led me to my conclusion on that

I realize that there are different shades of ochre, but the most typical is yellowish, and I've always taken the ochre jelly to be that color. The description in OD&D and the AD&D Monster Manual doesn't specify further, but in the DMG Appendix K, Gygax lists ochre under shades of yellow, so that would suggest what color he was referring to.
