Saw a post on FB asking about what to do with a hero vs. man when using the Man-to-Man combat system. They wanted to know if the hero gets to roll 4 times against his target. stormberg blew my mind saying yes. So my question here is, is the Man-to-Man (weapon v. armor) system compatible with the fantasy rules? (I though nope, two different systems, sure you can allow multiple throws to incorporate levels, but that ignores force types, e.g., hobbit v. goblin or dwarf v. goblin). Thoughts?

"Light Foot to Heavy Horse" implies Mass Combat (not Man-to-Man) so your argument is reasonable, that the Hero does not count as multiple figures in Chainmail Man-to-Man and therefore does not get multiple attacks.
Based on the quote above, I would simply award automatic victory to the invincible Hero. It is a no-win situation for the Man. I wouldn't even bother rolling dice, unless there were at least 4 men defending.
