Being at a low ebb of ready Gold Pieces yet nonetheless contemplating publication of some jottings, I wonder:
What fonts do you have installed and especially like to read? (I'm guessing that Helvetica or a close enough match meets the first criterion, and that any handy substitute for Times Roman is not especially worse.)
Can you dig getting directed to a site offering an intended font for free download?
PDF Creator is freeware and works like a charm. It sets up on your computer as printer, you print your file to it and it produces a PDF. I've used it on several difference systems and have never had any problems with it.
It appears that the regular Mac "save as PDF" print feature embeds fonts/subsets as SOP. Because there was no dialog asking about it, I assumed (oops!) that embedding was not included. That I had found a font not embedded in the Under Xylarthen's Tower PDF probably helped confuse me.
(I wanted to embed an image here of Emily Litella, but that didn't work out.)
